Quick and tasty Samoas or Girl Scout Cookies

- 1 Cup dates
- 1 Cup Unsweetened coconut chips
- 1⁄3 Cup milk chocolate chips
- 1⁄2 teaspoon coconut oil

Directions
Spread coconut chips on a baking sheet and toast them in the preheated oven to 200 C for about 4 minutes until golden and fragrant. Then, remove it from the oven and set aside to cool.
In a blender, combine the toasted coconut chips and dates. Blend until a dough-like consistency is achieved.
Take spoonfuls of the mixture, roll them into balls, and flatten them to form cookie shapes.
Use a chopstick or straw to create circles in the middle of each cookie. Place the cookies in the freezer for 10 minutes to harden.
In a mixing bowl, combine coconut oil and chocolate chips. Microwave for 30 seconds and stir until the chocolate is fully melted and blended with the coconut oil.
Dip the bottom of each cookie into the melted chocolate and place them on a baking sheet with the chocolate side facing up. Return the cookies to the freezer for another 10 minutes.
Flip the cookies around and drizzle the remaining melted chocolate on top of each cookie.
Place the cookies back in the freezer for 10 minutes to allow the chocolate to set. Enjoy!
