Directions
1.For the Christmas turkey roast, start by seasoning the turkey breast with salt and pepper. I recommend seasoning it generously to allow the flavor to come through well.
Peel the orange and onion and cut into large pieces, chop the garlic. Spread these together with the herbs in the skin of the turkey breast. I have found that this mixture gives the turkey breast a nice flavor note.
Heat the olive oil in a large pan and fry the turkey breast all over. It is important that the pan is quite hot so that the skin becomes nice and crispy.
Place the seared turkey breast in a roasting tin and pour over the chicken stock and white wine. Drizzle with honey. Trust me, the honey gives the roast a wonderful sweetness and makes the skin extra crispy.
Place the roast in a preheated oven at 180°C and roast for approx. 2 hours, basting regularly with the juices. The constant basting keeps the roast juicy and tasty. Serve the Christmas turkey roast for the festive season.
