Cut the chicken into bite-sized pieces. Put in a bowl and add light soy sauce, white pepper, egg and optionally Chinese rice wine. Mix everything together very well. Cover and leave in the fridge for at least 20 minutes.

Dissolve the cornflour with water in a small bowl and set aside for later.

In a bowl, mix the all-purpose flour with the cornflour very well. Then coat the chicken well with the flour and remove all the excess before frying.

Fry the chicken in plenty of vegetable oil over medium heat for 5 minutes. Remove to a wire rack and leave to rest for a couple of minutes.

Add the water, honey, light soy sauce, rice vinegar, sugar, and salt. Stir well until everything is dissolved. Gradually add the cornstarch dissolved in water and continue stirring until the sauce thickens.
