Directions
Preheat the oven to 180°C. It is essential that the oven is at the right temperature when the mojicones are placed in the oven so that they rise evenly.
In a bowl, mix together the flour, sugar, baking powder and salt. Make sure all the dry ingredients are well combined before incorporating the wet ingredients, as this contributes to the fluffiness of the mojicón.
Melt the butter in a saucepan over low heat and immediately add it to the dry ingredients.
Add the eggs one at a time, beating well after each addition. This is a very important step, as it ensures that the mojicones have a nice smooth texture.
Add the milk and lemon zest to the mixture, beating gently until a smooth batter is obtained. The lemon zest will add a touch of extra flavor that will make the difference.
Grease and flour a muffin tin. Fill each cavity 3/4 full with batter. Bake for 20-25 minutes or until the mojicones are golden brown.
Let them cool before unmolding and sprinkle with powdered sugar. The mojicones are delicious when fresh, but you can also save them for the next day. Just be sure to store them in an airtight container to keep them soft.
