Swedish apple pie baked simply
I love the Swedish apple pie! I learned about this recipe when I visited my Swedish host family. Every time I make it, I feel transported back to those wonderful times. This simple but delicious cake is extremely moist and has a great balance of sweet and tart flavors - just perfect for afternoon coffee or tea.

- 5 large Apples, peeled and cut into thin slices
- 200 g sugar
- 1 Teaspoon cinnamon
- 200 g butter
- 2 Eggs
- 200 g flour
- 2 Teaspoon baking soda

For the Swedish Apple Pie recipe, first prepare the apples. I've noticed that this recipe works best with large, juicy apples. After peeling and slicing into thin slices, mix with half the sugar and cinnamon. The juice from the apples mixes with the sugar and cinnamon, bringing out a fantastic flavor.
Preheat the oven to 180 degrees. Beat the butter and the remaining sugar in a mixing bowl until creamy. Then add the eggs one at a time until the sugar has dissolved.
Mix flour, baking powder and salt in a separate bowl. Gradually add the dry ingredients to the butter-sugar-egg mixture. Do not overmix the dough to get a moist cake.
Pour the dough into a greased round baking dish. Spread the apples on top and press them lightly into the dough. The Swedish apple cake should bake in the oven for about 45-50 minutes. I recommend testing with a stick after about 30 minutes, because every oven is a little different.
