Rich & Creamy Mushroom Beef Stroganoff

- 11⁄2 Pounds beef tenderloin or sirloin steak, sliced
- 1 finely chopped medium onion
- 4 cloves garlic, minced
- 2 cups button mushrooms, sliced
- 2 tbls flour
- 2 tbls butter
- 2 tbls vegetable oil
- 2 tbls mustard
- 1⁄2 Cup sour cream
- 1 Cup broth
- Salt and pepper, to taste
- Chopped parsley
- Cooked egg noodles or rice

Directions
Melt butter and heat oil in a skillet. Brown the meat and set aside.
In the same skillet, add the onion and garlic, sautéing until softened and fragrant. Add the mushrooms and cook until they release liquid and become brown.
Add flour and stir well to coat. Cook for an additional minute to cook out the raw flour taste.
Gradually pour in the beef broth while stirring constantly. Cook for about 5 minutes until the sauce has slightly reduced.
Return the meat to the skillet, stirring to combine with the sauce. Cook until the beef is cooked through and tender.
Add mustard to the mushroom sauce to temper the mixture.
Gently stir the sour cream mixture into the sauce. Season with salt and pepper. Adjust the flavors.
Serve the Beef Stroganoff over cooked egg noodles or rice. Garnish with fresh parsley for added flavor and presentation.
