Directions
Rinse the rice under cold water until the water runs clear. This helps get rid of excess starch and makes your cooked rice less gummy.
In a medium-sized, thick-bottomed pot, combine the rinsed rice, milk, and salt.
On medium-high heat, bring the mixture to a boil. Don't forget to stir occasionally to prevent the rice from sticking to the bottom.
Once it starts boiling, reduce the heat to low, cover the pot and let it simmer. Stir the mixture every few minutes.
After around 25-30 minutes, when the rice is cooked and has absorbed most of the milk, add the sugar and vanilla essence. Stir well, and continue to cook for another 10-15 minutes until you get a creamy consistency.
Remove the pot from the heat and let it cool a bit. The Creamed Rice will continue to thicken as it cools.
Serve warm in individual bowls. You can top it with a sprinkle of cinnamon, fresh berries, or sliced almonds.
