- 2 crab meat
- 50 g breadcrumbs
- 21⁄2 egg
- Worcestershire Sauce
- 1 spoon white pepper
- 1 tablespoon chili oil
- 1⁄2 spoon dried parsley
- 1⁄2 leek
- 1⁄2 courgette
- chive leaves
- tarragon
- dill
- chervil
- 1⁄2 lime
For the mayonnaise
- 1 yolk
- lime
- mustard

Directions
Cut the red pepper, leek and courgette. Chop the chives and parsley. Shred the crab meat. Mix the crab meat with the vegetables, chives and parsley.
Add the egg and mix well—season with Worcestershire sauce, white pepper and cayenne. Finally, add the panko, and a dash of chilli oil, mix well and leave to stand for a few minutes.
Make slices with portions of dough and place on a greased baking tray on greaseproof paper.
Bake at 180°C for about 12 minutes or until the slices are golden brown.
Place the egg yolk, mustard and lime juice in a blender. Emulsify with olive oil until smooth.
Serve the cakes with chopped aniseed herbs on top: tarragon, dill and chervil, and a freshly cut lime wedge.
