How to make Classic Honey Jumbles Biscuits
Honey Jumbles, a classic Australian biscuit, are soft and sweet with a hint of spice and a luscious lemon icing layer on top. They're perfect for tea-time delights, can be an ideal snack for kids, and serve as a wonderful choice during festive occasions.
Ingredients
For the Biscuits:
- 60 g unsalted butter
- 1⁄2 Cup With
- 1⁄4 Cup semolina sugar
- 11⁄2 cups self-raising flour, sifted
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon mixed spice
- 1⁄2 teaspoon ground ginger
For the Icing:
- 2 cups icing sugar mixture
- 1 tablespoon lemon juice
- 1 tablespoon boiling water
- A few drops food colouring (optional)

Directions
Preheat your oven to 180°C (160°C fan-forced). Line two baking trays with baking paper.
In a small saucepan, place the butter, honey and sugar on low heat. Stir until the butter has melted and the sugar has dissolved.
Remove the mixture from heat and allow it to cool for a few minutes.
In a mixing bowl, combine the sifted flour, baking soda, mixed spice, and ginger.
Pour the melted butter mixture into the flour mixture and stir until a sticky dough forms.
Using a teaspoon, drop pieces of the dough onto the prepared trays, leaving space for the biscuits to spread.
Bake in the oven for about 10-12 minutes, or until golden. Remove from the oven and let them sit on the baking trays for 5 minutes before moving them to a wire rack to cool.
Now, prepare the icing. In a bowl, sift the icing sugar and add lemon juice. Stir in the boiling water until the icing is a spreadable consistency. If using, add the food colouring and mix well.
Use a knife to spread the icing on the cooled biscuits. Let them sit until the icing hardens.
