French Quiche Pie
Quiche is a traditional French pie, mainly popular in the Alsace region. This recipe is for a typical version with a meat filling and a rich filling of eggs and cream. It's a delicate choice for brunch or a light dinner.

- 200 g Smooth flour
- 100 g butter
- 1 a piece Big egg
- 2 tablespoon cold water

- 150 g Grated Emmental
- 4 a piece Large eggs
- 200 ml whipped cream

Directions
First, prepare the pie crust. In a bowl, mix the flour with the butter cut into cubes and a pinch of salt. Work quickly to get a crumbly mixture.
Add the egg and cold water and quickly press the mixture into a smooth paste. Wrap the dough in plastic wrap and let it rest in the refrigerator for at least half an hour.
Meanwhile, prepare the filling. Cut the bacon into cubes and fry it in a pan until it is well fried. It can also be slightly crispy.
In a large bowl, mix the eggs, cream, grated Emmental, salt and pepper until smooth.
Roll out the dough to approximately 5 mm thick and then press it into a quiche mold. Then pierce the dough with a fork in several places.
Spread the fried bacon on the dough and then pour over with the egg and cream mixture. Bake the pie in a preheated oven at a temperature of 180 degrees Celsius for about 30 minutes, until the top begins to be nicely golden brown.
Let the quiche rest for at least 10 minutes before slicing and serving it.
