- 3 Cucumbers
- 250 ml wine vinegar
- 250 ml water
- 1 tablespoon Mustard seeds
- 1 bay leaf
- 4 tablespoon salt
- 1⁄2 spoon turmeric
- 2 tablespoon red and black pepper

1. Step
Wash the cucumbers very well removing any dirt or grime.
2. Step
Cut into strips or slices and place in a colander with a handful of salt, stir and set aside so that the cucumber releases all the water.
3. Step
Put the vinegar, water, mustard seeds, turmeric, bay leaf, salt and pepper in a saucepan, bring to a boil for a few minutes and set aside.
4. Step
Place the cucumbers in the sterilised jars and fill them. Leave at least 2 cm under the lid. Then, add the liquid and the thyme.
5. Step
Close the jars and place them in a bain-marie for perfect preservation. Enjoy!
