For the pastry:
- 2 letters ready-made puff
- 1 egg (for egg wash)
For the filling:
- 500 g sausage meat
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried herbs
- Salt and pepper, to taste

Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the ground sausage meat, chopped onion, minced garlic, dried herbs, salt, and pepper. Mix until all the ingredients are evenly incorporated.
Roll out the puff sheets onto a lightly floured surface. Cut each sheet in half lengthwise to four equal-sized rectangles.
Divide the sausage meat mixture into eight portions and shape them into long, thin logs.
Place one sausage log diagonally on each rectangle of puff pastry. Gently roll the pastry around the sausage, ensuring it overlaps slightly. Pinch the seam to seal.
Repeat the process with the remaining sausages and pastry rectangles.
Move the rolls to the prepared baking sheet, seam-side down. Brush the tops of the rolls with beaten egg for a golden finish.
Using a sharp knife, make small slits on the top of each roll to allow steam to escape during baking.
Bake in the preheated oven for 25-30 minutes or until brown and crispy.
Once cooked, transfer the sausage rolls to a plate to cool slightly before serving.
