Easy Classic Italian Gnocchi Vegetable Soup

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, peeled and chopped
- 2 Stems celery, chopped
- 1 teaspoon dried basil
- 4 cups chicken broth
- 1 Package potato gnocchi
- 2 cups diced cooked chicken
- 1 Cup fresh spinach, chopped
- salt and pepper to taste
- 1 Cup heavy cream

Directions
Heat the olive oil in a large pot over medium heat.
Add in onions, garlic, carrots and celery, sauté until they become tender.
Stir in the dried basil, followed by the chicken broth. Bring the mixture to a boil.
Add in the potato gnocchi and diced chicken. Cook the mixture on a reduced heat for about 15-20 minutes or until the gnocchi is cooked thoroughly.
Stir in the chopped spinach and cook until it is wilted.
Season the soup with salt and pepper to taste.
Lastly, stir in the heavy cream and heat through.
