Delicious Mango crumble bar
If there's one thing I love about summer, it's the abundance of fresh and delicious fruits it offers, especially mangoes. This mango crumble bar is a heavenly dessert that I usually make for my Sunday brunches. The sweetness of the mango, the crunchy texture of the crumble and the light touch of tartness make this recipe a hit with my family and friends. I even made it once for a potluck gathering and it was a big hit.
Ingredients
- 2 mugs of all-purpose flour
- 1 mug Quick cooking oatmeal
- 1 mug of brown sugar
- 1 cdta Of baking powder
- 1⁄4 cdta Of salt
- 1 mug unsalted butter, cold and cut into cubes
- 1 large Egg
- 4 mugs Mango peeled, pitted and chopped
- 1⁄2 mug crystal sugar
- 2 teaspoons of lemon juice
- 2 cdas maize starch

Directions
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch pan.
In a large bowl, combine the flour, oats, brown sugar, baking powder and salt. Using your hands, stir in the cold butter and egg until the dough has a lumpy, moist texture. This is a critical step that can affect the texture of your bars, so take your time to mix well.
Reserve 1 cup of this mixture for the crumble on top and press the rest evenly into the bottom of the prepared pan.
In another bowl, mix the mango, sugar, lemon juice and cornstarch. I would recommend that the mangoes are well ripe for a sweet and juicy result.
Spread the mangoes evenly over the batter in the pan and then spread the reserved crumble mixture on top.
Bake for 45-50 minutes or until crumble is golden brown. Let the bars cool completely in the pan before slicing.
Once cooled, cut the bars and serve - enjoy!
