- 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
- 1 onion
- 3 cloves garlic, minced
- 2 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1⁄2 teaspoon ginger powder
- 1⁄2 teaspoon cinnamon
- 1 can diced tomatoes
- 1 Cup chicken broth
- 1 Cup coconut milk
- salt and pepper
- fresh cilantro for garnish

In a slow cooker, add the chicken, onion, and garlic.

In a separate bowl, mix together the curry powder, cumin, coriander, turmeric, paprika, ginger, and cinnamon. Add this mixture to the slow cooker and toss to coat the chicken evenly.
