Ingredients
- 1 lb boneless skinless chicken breasts
- 2 tablespoon Cooking oil
- 2 tablespoon sesame oil
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1⁄2 teaspoon ground ginger
- 11⁄2 Cup frozen peas and carrots
- 4 beaten eggs
- 1⁄2 Cup chopped green onions
- 4 cups cooked rice
- 1⁄4 Cup soy sauce

Directions
Cut the chicken into 1/2-inch cubes.

Heat cooking oil and sesame oil in a large skillet or wok over medium-high heat. Once hot, add the chicken and season it with salt, pepper, and ginger. Sauté and cook for 5-7 minutes.

Reduce the heat to low, remove the chicken, and set it aside. Add carrots and peas to the skillet and sauté them for about 2 minutes. Then, add minced garlic to the skillet and continue sautéing for about 1 minute.
