Simple Crispy Oven Roasted Whole Artichokes

- 4 whole artichokes
- 1⁄2 Cup of olive oil
- 2 lemons, juiced
- 6 cloves garlic, minced

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
Prep the artichokes by trimming off the top third and the bottom stem. Then split in half lengthwise.
Use a spoon to remove the fuzzy choke from the center of each artichoke half.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
Brush each artichoke half liberally with the olive oil mixture, ensuring each area is covered. Lay them on a large baking sheet, cut-side down.
