Simple Authentic Indian Vegetable Curry
Vegetable curry is a flavorful and nutritious dish that can be enjoyed by both vegetarians and meat-eaters. This aromatic curry is made with a combination of fresh vegetables, spices, and a creamy coconut milk base. Serve it over steamed rice or with warm naan bread for a satisfying and delicious meal.
Ingredients
- 2 tbls vegetable oil
- 1 onion
- 3 cloves of garlic, minced
- 1 thumb fresh ginger, grated
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1⁄2 teaspoon turmeric powder
- 1⁄4 teaspoon cayenne pepper (optional, for heat)
- 1 can coconut milk
- 1 Cup vegetable broth
- 2 carrots
- 1 bell pepper, diced
- 1 zucchini
- 1 Cup cauliflower florets
- 1 Cup green beans, trimmed and cut into 1-inch pieces
- Salt and pepper, to taste
- Fresh cilantro, for garnish

Directions
Heat the vegetable oil in a large pot or deep skillet over medium heat.
Add chopped onion and cook becomes translucent, about 5 minutes.
Stir in the minced garlic and grated ginger, cooking for an additional minute.
Add the curry powder, ground cumin, ground coriander, turmeric powder, and cayenne (if using). Stir.
Pour the can of coconut milk and broth in. Bring the mixture to a simmer.
Add bell pepper, zucchini, sliced cauliflower florets, and green beans to the pot. Combine everything together.
Cover pot and simmer until the vegetables are tender.
Season with salt and pepper to taste. Adjust spice level by adding more curry powder or cayenne pepper if desired.
Serve the vegetable curry over steamed rice and garnish with fresh cilantro.
