Quick Simple Mini Savoury Cheese Muffins

This Mini Savoury Muffins recipe is definitely one of my favourites. My family loves it when I whip up a batch on the weekends, and they're also great as an appetizer for parties. They are easy to make and customizable with variations of fillings per one's preference. 1. Step

For preparation, first, preheat your oven to 200°C (400°F). This is an important step to ensure the perfect texture and prevent your muffins from being over or undercooked. After preheating, lightly grease a mini muffin tin.

Whisk together the flour, baking powder, salt, and pepper in a large bowl. Remember not to over mix as this could result in dense muffins. Then, stir in the cheese and spring onions until well combined. In another small bowl, whisk together the milk, olive oil, and eggs until well mixed.

Now, gradually pour the wet ingredients into the dry ingredients and gently mix until just combined. Whether you use a wooden spoon or a spatula, make sure not to overmix. It's alright if you could see a few lumps; this can actually make your muffins fluffier.

4. Step

Scoop the mixture into the muffin tin, filling each about 2/3 full. This space allows the muffin to rise without overflowing. Bake for 15-17 minutes, or until the muffins are golden and a toothpick inserted comes out clean. Let them cool slightly in the tin before transferring to a wire rack to cool completely. Be sure not to leave them in the tin for too long as they could become soggy.
