Quick Homemade Crispy Veggie Burger Patties

- 2 cups assorted vegetables (carrots, bell peppers broccoli etc) finely chopped
- 1 finely chopped medium onion
- 2 cloves garlic, minced
- 2 tbls olive oil
- 1 Cup breadcrumbs
- 1⁄2 Cup flour
- 2 eggs, beaten (for vegan option, substitute with flax eggs)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried herbs (oregano or basil)
- Olive oil for frying

Start by preparing the vegetables. Cut them into small pieces and then chop finely using a food processor. You could also grate the vegetables.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onions are transparent and fragrant.
Add the finely chopped vegetables to the skillet. Cook until the vegetables are tender. This should take about 5-7 minutes.
Remove the skillet from heat and let the vegetable mixture cool slightly.
In a large bowl, combine the cooked vegetables, breadcrumbs, flour, beaten eggs, salt, pepper, and dried herbs until well mixed.
Shape the mixture into patties. Depending on the size you want, this recipe can yield 8-10 patties.
Heat more olive oil over medium heat in a clean skillet. Add the patties and cook until crisp and golden brown, about 4-5 minutes per side.
Place the cooked patties onto a paper towel to drain any excess oil.
Serve the veggie patties as is, or in a bun with your favourite sauces, lettuce, and tomatoes. Enjoy the delightful crunchy exterior and the flavourful interior.
