Quick and tasty Swiss Meringue Buttercream

Ingredients
- 150 g egg whites
- 300 g crystal sugar
- 450 g Soft Unsalted Butter
- 1⁄2 teaspoon vanilla essence
- Food colouring
- pinch of salt

Directions
Place the egg whites and sugar in a heatproof bowl and place in a double boiler. Heat and stir until all the sugar is dissolved.
Transfer the mixture to the mixer bowl and beat on high speed for 10 minutes or until it barely reaches stiff peaks and is at room temperature.
With the spatula, go around the sides and bottom of the bowl and start beating again at medium speed.
Add the butter in small portions and beat faster until it takes consistency.
Add the vanilla essence and the food colouring.
Beat at minimum speed for 5 to 10 minutes to eliminate air bubbles and make it silky.
Transfer to a piping bag and decorate to taste.
