Old-Fashioned Flummery Fruit Dessert
Flummery is a traditional British dessert that dates back to the 17th century. Flummery delivers a creamy and light dessert experience with the wonderful addition of orange and lemon flavors. This gelatin-based texture dessert can be served on its own or accompanied with fresh fruit or cream.
Ingredients
- 1 teaspoon of powdered gelatin.
- 1 Cup of fresh orange juice.
- Zest and juice of one lemon.
- 1⁄2 Cup of granulated sugar.
- Fresh berries or whipped cream to serve (optional)

Directions
Begin by soaking the gelatin in 2 tablespoons of cold water. Leave it for 10 minutes until it swells and softens.
While the gelatin soaks, pour the orange juice, lemon zest and juice into a pan along with the sugar. Heat gently over medium heat until the sugar completely dissolves. It's important that the mixture should not boil.
Add the swollen gelatin to the pan and stir well until it dissolves fully into the orange and lemon mixture. Keep stirring to prevent the gelatin from sticking to the bottom.
After everything is well combined, remove the pan from the heat and leave to cool.
When the mixture is cool, pour it into individual serving bowls or a large serving dish. Cover and place in the refrigerator for at least 3 hours, or overnight if possible, until set.
Once set, it's ready to serve. The flummery can be enjoyed on its own or with fresh berries or a spoonful of cream on top.
