1. Step

Preheat the oven to 180ºC. In the meantime, chop the garlic and fresh herbs.

Season the pork loin with salt, pepper, garlic and chopped herbs.

3. Step

Heat the olive oil in a large pan over medium-high heat. Add the pork loin and sear on all sides until golden brown.

4. Step

Transfer the pork loin to a baking dish and roast for about 1 hour and 30 minutes, or until the internal temperature reaches 63ºC.

5. Step

Remove the pork loin from the oven and let it rest for about 10 minutes before cutting it. Serve hot.
