- 1 onion
- 1 sweet red onion
- 2 cloves garlic
- 1 tablespoon ginger
- 4 tablespoon Thai red paste
- 400 g plum tomatoes
- 400 ml coconut milk
- 1 sweet potato
- 1⁄2 head cauliflower
- 150 g baby spinach
- 1 lime juice

1. Step
Melt oil in a pan and add chopped onion and red pepper. Saute for 10 minutes. Then add diced garlic, ginger, and Thai red paste.
