Homemade Fresh or Frozen Strawberry Purée
Strawberry purée is a delightful, versatile recipe packed with the fresh and tangy flavors of strawberries. This purée can be used in several ways, from being an addition to your sparkling wine, shakes, ice creams, cakes and even in sauces. It's an easy and quick recipe that brings a taste of summer throughout the year.
Ingredients
- 2 Pounds of fresh or frozen strawberries
- 1⁄4 Cup crystal sugar
- Juice of o lemon

Wash and hull the strawberries. If you're using frozen strawberries, you can skip this step.
Combine the strawberries, sugar and lemon juice in a blender or food processor.
Blend the mixture until it's smooth and the sugar is well incorporated.
If you prefer a smooth texture, strain the purée through a fine-mesh strainer to remove the seeds. This step is optional.
Store the purée in the refrigerator for an hour before use; this will also help the flavors blend. You can store the purée in an airtight container in the refrigerator for up to two weeks or in the freezer for up to six months.
