Homemade cinnamon rolls yeast dough

I've made this recipe several times and it's a hit every time. The cinnamon rolls are slightly crispy on the outside, wonderfully soft on the inside and the luscious layer of sweet icing rounds off the whole thing perfectly. They are the perfect accompaniment to a hot cup of coffee in the morning or a sweet surprise for afternoon tea.

For the dough:

  • 520 g flour Added to

  • 240 ml Warm water Added to
  • 60 ml vegetable oil Added to

For the filling:

  • 200 g brown sugar Added to
  • 2 Tablespoon cinnamon Added to
  • 80 g melted butter Added to

For the glaze:

  • 200 g confectionery sugar Added to

1. Step

For the cinnamon roll recipe, start by preparing the dough. Mix the flour, sugar, salt and dry yeast in a large bowl. Add the warm water, vegetable oil and eggs and knead everything thoroughly. I recommend using a powerful mixer with a dough hook to make the work easier.

2. Step

When the dough is well kneaded, place it in a warm place and leave it to rise for approx. 1.5 hours. The dough should swell to about twice its volume.

3. Step

While the dough is rising, you can prepare the filling. Simply mix the brown sugar and cinnamon in a bowl and set aside.

4. Step

Once the dough has risen, knead it again briefly on a lightly floured surface. Then roll it out into a rectangle measuring approx. 40 cm x 30 cm and brush the surface evenly with the melted butter. Now sprinkle the cinnamon and sugar mixture generously over the dough.

5. Step

Now roll up the dough from the long side and cut it into slices about 5 cm thick. To ensure that the rolls bake evenly, try to cut them as evenly as possible.

6. Step

Place the rolls on a baking tray lined with baking paper and leave to rise again for 30 minutes.

7. Step

Preheat the oven to 180°C and bake the cinnamon rolls for around 20-25 minutes or until they are golden brown.

8. Step

Meanwhile, mix the powdered sugar and milk for the icing and pour it over the still-warm cinnamon rolls. Stir the icing just before applying it to the rolls so that it doesn't dry out and remains nice and runny.
