Homemade Chicken & Vegetable Soup
This flavorful chicken and vegetable soup is perfect for cold days. It will give you all the nutrients you to stay healthy. Serve it with crusty bread to enjoy a warm and comforting meal.
Ingredients
- 1 boneless skinless chicken breast, cubed
- 2 tbls olive oil
- 1 onion
- 4 cloves garlic, minced
- 2 Stems celery
- 2 carrots
- 1 red bell pepper, diced
- 1 teaspoon dried thyme
- 1 teaspoon Dried Rosemary
- 1 teaspoon dried oregano
- 8 cups chicken stock
- 1 can diced tomatoes
- 1 Cup frozen corn
- 1 Cup frozen peas
- salt and pepper to taste

Directions
In a large pot or heat the oil. Add the onion and garlic, sauté for 2-3 minutes or until fragrant.
Add the chicken and cook for 5-7 minutes or until golden brown on all sides.
Add the celery, carrots, and red bell pepper and cook for another 5 minutes or until the vegetables are slightly softened.
Add the thyme, rosemary, oregano, chicken stock, and diced tomatoes. Bring to a boil and then reduce heat to and let cook for 15-20 minutes.
Add the corn and peas and cook for an additional 5 minutes or until vegetables are fork-tender.
Season with salt and pepper to taste.
Serve hot with some crusty bread or crackers.
