Healthy Italian Chicken Cacciatore in Slow Cooker

Ingredients
- 4 chicken breasts, boneless skinless
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 can tomato paste
- 1⁄2 Cup chicken broth
- 1⁄2 Cup dry red wine (optional)
- 1 tablespoon Italian spices
- 1 teaspoon dried oregano
- 1⁄2 teaspoon crushed red pepper flakes
- salt and black pepper to taste
- Fresh basil leaves, for garnish (optional)
Directions
Place the sliced onions, bell peppers, and minced garlic in the slow cooker.
Season the chicken breasts with salt, black pepper, dried oregano, and Italian seasoning. Add the seasoned chicken breasts on top of the vegetables in the slow cooker.
In a separate bowl, combine the diced tomatoes, tomato paste, chicken broth, and red wine (if using). Mix well until everything is well incorporated.
Pour the tomato mixture over the chicken and vegetables in the slow cooker, ensuring all ingredients are evenly coated.
Cover the slow cooker and cook on hours or on high heat for 3-4 hours until the chicken is tender and flavors have melded together.
Once cooked, use two forks to shred the chicken breasts into smaller pieces.
Adjust the seasoning with salt and pepper, if needed. Stir in the crushed red pepper flakes.
