Healthy Authentic Thai Chicken Laksa
Chicken Laksa is a popular Malaysian dish that is rich and flavorful. It is a spicy noodle soup made with chicken cooked in a coconut milk broth and served with vegetables and fragrant spices.
Ingredients
- 2 chicken breasts, sliced
- 1 can coconut milk
- 4 cups chicken broth
- 2 teaspoons chili paste
- 1 Lemongrass
- 2 tbls fish
- 1 tablespoon oil
- 1 onion
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 red pepper, sliced
- 1 Cup snow peas
- 2 cups rice noodles
- 1 lime
- 1⁄4 Cup cilantro, chopped

Directions
In a large pot, heat oil over medium heat. Add chopped onion, minced garlic, and minced ginger and sauté until onion is soft and fragrant.
Add the sliced chicken to the pot and cook until browned on all sides.
Mix in the red pepper, peas, and lemongrass and cook for a few minutes until vegetables are soft.
Add broth, coconut milk, chilli paste, and fish sauce to the pot. Bring the mixture to a boil, then reduce heat to a simmer and let cook for 10-15 minutes.
Meanwhile, cook the rice noodles according to package instructions.
To serve, divide the noodles among four bowls. Ladle the laksa soup over the noodles. Garnish each bowl with lime wedges and chopped cilantro.
