Green Chiles and Ham Breakfast Tacos
Nothing opens our eyes in the morning like breakfast tacos, especially ones that hold something bold and spicy. Here, we combine sautéed poblano chile strips with ham under a fried egg, served in a warm corn tortilla. Up and at ’em!
Ingredients
- vegetable oil
- 1 medium poblano chile seeded and cut into strips
- 3 Slice ham cut into strips
- 6 large eggs
- Kosher salt
- 6 corn Tortillas

Directions
Set a medium nonstick skillet over medium heat and add a little oil.
Add the poblano strips and sauté until they soften, about 10 minutes.
Add the ham and sauté with the chiles for 5 minutes; set aside.
Grab a small nonstick skillet, add a bit more oil to the center, and break in 1 egg. Season with a little salt and fry until the white is set. Repeat with the remaining 5 eggs.
Meanwhile, heat your tortillas (we do it directly over a gas flame till they’re puffed and a little blistered), and then evenly distribute the green chile–ham mixture among the tortillas.
Top each taco with a fried egg and eat while hot!
