Gluten-Free Anzac Biscuits
A recipe for these classic Australian cookies, gluten and dairy free!

- 150 g gluten free flour
- 90 g gluten free oats
- 1 teaspoon xanthan gum
- 50 g Desiccated Coconut
- 150 g semolina sugar
- 125 g butter
- 2 tablespoon Golden Syrup
- 2 tablespoon boiling water
- 11⁄2 teaspoon baking soda
- 1 teaspoon vanilla essence

Preheat oven to 160 C.
2. Step
Mix dry ingredients in a bowl. Melt butter and golden syrup in a pan on low heat. Turn off the heat, and add baking soda, water, and vanilla. Pour the wet mixture in the dry ingredients. Mix well. Roll the dough into small balls, place on a tray with parchment paper and flatten slightly. Bake for 20 minutes. Let cool and enjoy!
