Directions
To recreate susa's galao recipe start by preparing the espresso. I recommend using an espresso machine for the best result. The espresso should be strong and full-bodied to mix well with the milk and achieve the perfect galao taste.
While the espresso is being prepared, heat the milk in a small pot. But be careful that it does not come to a boil. A good temperature is around 60-65 degrees Celsius.
Once the espresso is ready, pour it into a large tall glass.
Next, froth the hot milk. If you don't have a milk frother, you can also use a whisk and beat the milk until it is nice and frothy.
Slowly pour the frothed milk over the espresso in the glass. When doing so, make sure that the milk foam remains on top of the coffee to achieve the typical Galao appearance.
Finally, sweeten your galao with sugar to your taste.
And voila! Your homemade Galao from susa is ready to serve and enjoy.
