Easy vegan carrot cake recipe
You like carrots or not you will like this carrot cake. It's soft and moist, you don't really taste carrot in it.

- 250 g all purpose flour (1¾ cups-pressed into the cup)
- 350 g finely grated carrot(2 cups pressed into the cup)
- 200 g sugar(1 cup)
- 4 egg
- 2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon orange juice
- 3 tablespoon orange zest
- 2 tablespoon raisins

1. Step
Coarsely grate carrot in a food possessor
2. Step
Sift flour baking powder and baking soda together
3. Step
In a big bowl beat egg, sugar, salt, orange juice, and zest until pale

Add oil slowly and beat
5. Step
Gently fold in flour add

Mix carrot
7. Step
Pour the batter in a parchment paper-lined baking pan
8. Step
Sprinkle raisin on top then bake
9. Step
Baking time: 170°C(340°F) for 90mins (10mins more or less)

Keep an eye during baking. if you see the top is burning, place an aluminium foil on top as soon as you get a nice brown colour. Let it cool down completely.
