Easy homemade Vegan Laksa Noodle Soup
This easy recipe teaches how to make the best Laksa Noodle Soup, a popular dish from Southeast Asian cuisine, particularly from Malaysia, Singapore, and Indonesia. This version is vegan. Don't miss it!
Ingredients
For the Laksa soup
- 1 tablespoon red curry Paste or Laksa Curry Paste
- 600 ml vegetable stock
- 1 can coconut milk
- 1 teaspoon turmeric
- 1 list Blended nori
- 1 teaspoon chili oil
- 1 teaspoon Sou Sauce
- 1 tablespoon Nut butter
- 2 teaspoon brown sugar
Noodles
- 1 pack Noodles
- 1⁄2 Block firm tofu
- Pak Choy
- salad cucumber
- coriander
- lime
- bean sprouts
- spring onions
- sesame seeds

Directions
Start by grabbing a pan and adding some sesame oil and chilli oil. Spoon in the curry paste and stir until fragrant.
Now add turmeric and stir to coat.
Add the vegetable stock, coconut cream and nori sheet.
Once simmering, add the soy sauce, sugar and nut butter and stir to combine. Let it simmer on low heat.
Cook the noodles along with the pak choy.
Serve the soup in a bowl. Top with the noodles, pak choy, cucumber, fried tofu, bean sprouts, coriander and a squeeze of lime. Finish off with a drizzle of chilli oil and some sesame seeds.
