Ingredients
- 500 g mascarpone
- 4 egg
- 4 tablespoon sugar
- 2 tablespoon Liqueur or Marsala wine
- 40 Savoiardi biscuits
- 200 ml Espresso coffee
- cocoa

Directions
Divide the eggs into yolks and whites.

Add a tablespoon of sugar to the yolks and beat until light and fluffy. Mix the mascarpone with the whipped yolks. Optionally you can add liqueur or Marsala wine.

Beat the egg whites with 3 tablespoons of sugar until stiff peaks form. Gently fold the beaten yolks into the yolk mascarpone, stirring with a spatula to keep the cream light.

Dip the Savoiardi biscuits in coffee. Place on the form.

Spread half of the cream, then another layer of biscuits and then the cream again.

Cover the mould with cling film and refrigerate for at least 2 hours.
