Delicious traditional Spanish potato omelette stuffed with ham and cheese
The Spanish potato omelette is quick and an easy meal to make at home. This is a simple and delicious recipe, with ham and cheese is better than ever!
Ingredients
- 3 potato
- 5 egg
- 1⁄2 onion
- 4 slices ham
- 8 slices cheese
- salt
- olive oil

In a frying pan over medium heat, add a good splash of oil. Then, add the potatoes, well peeled and chopped, and the onion cut into larger pieces. Add a pinch of salt and leave to cook, frequently stirring with a wooden spoon, for about 10 minutes.

Smash the potato with the spoon. Leave to cook for a further 5 minutes.

Put the eggs in a bowl. Add a pinch of salt and beat well.

Add the mashed potato and onion and mix until a homogeneous mass is obtained.

Put a drizzle of olive oil in a smaller, deeper frying pan over moderate heat. Place about 1/3 of the potato and egg mixture on top.

Top with 4 slices of cheese, 4 slices of ham and finally another 4 slices of cheese.

Top with the rest of the potato and egg. Cook over moderate heat for 5 minutes.

With the help of a plate, turn the ham and cheese omelette over and place the other side in the frying pan. Cook for a further 5 minutes.
