Delicious Chicken a la Jardinera
As a lover of home cooking and homemade flavors, this recipe for 'Pollo a la Jardinera' is one of my favorites. It is a dish full of color, flavor and texture. It is ideal for a family lunch and best of all, it is quite easy to prepare. Below, I share with you this recipe that I have cooked repeatedly and it is always a success.
Ingredients
- 4 breasts Chicken
- 2 Medium carrots
- 1 red bell pepper
- 1 green bell pepper
- 1 can of peas
- 4 medium sized potatoes
- 1 onion
- 2 clove garlic
- salt to taste
- Pepper to taste
- olive oil
- 1 twig thyme
- 1 glass of white wine

Start by cleaning and julienning the peppers and carrots. Cut the potatoes into small cubes. The same for the onion and garlic, we want them finely chopped (a trick I learned, chop the garlic and onion very fine to better impregnate their flavor in the rest of the ingredients).
Season the chicken breasts with salt and pepper to taste. In a large skillet, add a splash of olive oil and add the chicken breasts. Sear the chicken breasts on both sides, we don't want them completely cooked, just browned to trap the juices inside.
Remove the chicken from the pan and in the same pan add the onion, garlic, peppers, carrots and potatoes. After having roasted this dish many times, I recommend cooking these ingredients over medium heat for about 15-20 minutes so that they soften and absorb the flavor of the chicken.
Add the chicken back to the pan, add the peas and the sprig of thyme to give it that special aromatic touch. Pour the glass of white wine (a good quality wine will make the difference, I promise).
Leave it over medium heat for 15 minutes more to allow all the flavors to meld and the alcohol in the wine to evaporate. Make sure the chicken is fully cooked.
Taste it and adjust the salt and pepper if necessary. And voilà, we have our chicken a la jardiniere ready to delight.
