- 2 tablespoon olive oil
- 1 diced onion
- 3 Stems celery diced
- 1 sliced fennel bulb
- 2 cloves garlic chopped
- 1⁄2 teaspoon red chilli flakes
- 1 tablespoon chopped thyme
- 1 tablespoon chopped rosemary
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 450 g chestnut mushrooms
- 1 tablespoon tomato paste
- 1 can green lentils
- 400 ml vegetable stock cube
- 100 g baby spinach
- salt and pepper

1. Step
Heat oil, add onion, celery, fennel, and saute for 5 minutes. Then add garlic, chilli flakes, thyme, rosemary, paprika, oregano, and mix.

Next add chopped mushrooms, and cook for 7 minutes. Add tomato paste, lentils, and vegetable stock. Bring to a boil, and cook for 10 minutes.
