Best Slow Cooked Easy Pumpkin Soup

Ingredients
- 1 pumpkin
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 Cup heavy cream tbsp olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- salt and pepper to taste
- Chopped parsley for garnish

Directions
Cut the pumpkin in half and remove the seeds and pulp.
Slice the pumpkin into small chunks and place them in a slow cooker.
Add the chopped onion, minced garlic, chicken or vegetable broth, and olive oil to the slow cooker.
Season the mixture with cinnamon, nutmeg, salt, and pepper to taste.
Place the lid on the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
Once the pumpkin is cooked, use an immersion blender to blend it until it is smooth and creamy.
Add the heavy cream and blend until well combined.
Ladle the soup into bowls and garnish with chopped parsley.
