Best potato scones
The smell as it bakes in the oven and the sophisticated combination of crispy exterior and soft interior is simply irresistible. I have made it several times and it has been a huge success every time. I'm sure you'll love it too!
Ingredients
- 500 g potato
- 500 g Fine flour
- 2 pc egg
- 1 package yeast
- 1 tablespoon salt
- 15 g Fat
- Fat or oil for frying

Directions
Boil the potatoes, then mash them while still hot.
Add the flour, fat, salt and eggs. A typical mistake is to use too much flour, which makes the dough tough. To start with, use only enough flour to just hold the dough together.
Cook the yeast in a little lukewarm water and add to the dough.
Mix the ingredients well, then cover and let the dough rise for 1 hour.
Roll out the dough, cut it into shapes with a pastry cutter and place it on a greased baking tray.
Before baking, brush the scones with egg to give them a nice colour. However, when doing this, you should be careful not to spill the egg on the scones, as it can easily stick to the bottom.
Bake in a preheated oven at 190°C for about 20-25 minutes.
