Best Ginger Cookies Ever
Delicious and spicy ginger cookies, perfect for the holiday season or any time you need a sweet treat. Made with candied ginger, these cookies have a delightful kick.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 teaspoon ground ginger
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 Cup candied ginger, finely chopped
- 3⁄4 Cup unsalted butter, room temperature
- 1 Cup granulated white sugar
- 1 large Egg
- 1⁄4 Cup molasses

Directions
Preheat your oven to 350 degrees (175 degrees Celsius). Line two baking sheets with parchment paper.
In a large bowl, whisk together flour, baking soda, salt, ground ginger, and cinnamon.
In a separate bowl, beat the butter and sugar together until fluffy. Then beat in the egg, followed by the molasses, until just combined.
Gradually add the dry ingredients into the wet, mixing just until incorporated. Fold in the chopped candied ginger.
Roll the dough into 1 inch (2.5cm) balls, then roll in granulated sugar. Place them about 2 inches (5cm) apart on the prepared baking sheets.
Bake for about 10-12 minutes or until the cookies are puffed and slightly golden. They will be soft coming out of the oven but will firm up as they cool. Allow them to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
