Avocado spread with egg
Avocado spread with egg is one of my favorite things to make for breakfast or snack. It has a subtle avocado flavor that is brightened up with lemon juice and enhanced by the addition of a poached egg.

- 2 a piece ripe avocados
- 4 a piece Eggs
- 2 kl lemon juice
- salt and black pepper to taste

1. Step
Cut the avocado in half, remove the pit and scoop out the flesh with a spoon. Then mash it into a fine paste, add lemon juice, salt and pepper to taste and mix everything together. It is best to mash the avocado as soon as it has been picked.
2. Step
Hard boil the eggs. It takes roughly 10 minutes from the moment the water starts to boil. Then run cold water over them to help them peel better.
3. Step
Peel the boiled eggs and cut into small pieces or grate.

Mix the eggs with the avocado.
