Authentic Healthy Chicken Pad Thai Noodles
Chicken Pad Thai is a flavorful street-style Thai dish that brings together fresh, aromatic ingredients, wrapped in perfectly cooked rice noodles. The tangy-spicy flavor leaves a contented smile on everyone's face.
Ingredients
Ingredients:
- 200 gms of Flat Rice Noodles
- 2 Boneless Chicken Breasts, thinly sliced
- 2 eggs, lightly beaten
- 1 Cup of Bean Sprouts
- 4 spring onions, sliced
- 2 cloves of garlic, minced
- 1⁄2 Cup of Dry Roasted Peanuts, crushed
- 2 tbls of vegetable oil
- Lime Wedges, to garnish
For the Pad Thai Sauce:
- 4 tbls of fish sauce
- 2 tbls of sugar
- 2 tbls of Tamarind Paste
- 1 tablespoon of Sriracha Hot Sauce

Directions
Start by preparing the sauce. In a small bowl, mix the fish sauce, sugar, tamarind paste, and sriracha. Set aside.
Cook the noodles according to the package instructions till they’re tender but still firm, then rinse and drain.
Heat the oil in a wok or large pan, add the garlic and fry until golden brown. Then add the chicken breast slices and stir fry until they’re cooked through.
Push everything to one side and pour the eggs into the wok. Allow it to set for a few seconds then scramble and mix into the chicken.
Add the noodles and Pad Thai sauce to the wok, stirring well to ensure everything is well combined.
Add the bean sprouts and spring onions, stir and cook for additional 2 minutes.
Serve the Pad Thai into bowls, topped with crushed peanuts and accompanied with lime wedges for squeezing.
