Aromatic oriental aniseed cookies for Christmas
I always associate this wonderful recipe for aniseed cookies with Christmas and the sweet smells of my grandma's kitchen. Every year we make these delicious cookies and keep the family Christmas tradition alive. My grandma's apothecary scales are of course also used to determine the perfect mixture of aniseed and sugar.
Ingredients
- 3 Eggs
- 250 g sugar
- 1 Teaspoon Aniseed, ground
- 375 g flour
- 1 Teaspoon baking soda

Directions
To make the aniseed cookies, first beat the eggs in a bowl until they are frothy. Make sure that the eggs are really well beaten, as this will help to ensure that your cookies are nice and fluffy later on.
Now slowly add the sugar and ground aniseed and stir everything well. A good mixture is crucial for the taste and success of the cookies, so take some time for this.
In a separate bowl, mix the flour with the baking powder. Then add this mixture to the egg mixture and knead the dough until it is smooth and no longer sticks to the bowl.
Now comes the most important part: leave the dough to rest for at least 24 hours, preferably even 48 hours. This resting time is important so that the flavor of the aniseed can develop properly and the cookies later acquire their unique taste.
Preheat the oven to 180 degrees and roll out the dough on a floured surface. Cut out the cookies and place them on a baking tray lined with baking paper.
Bake the aniseed cookies for about 10-12 minutes or until golden brown. Every oven is slightly different, so keep an eye on the cookies to make sure they don't burn. Decorate the aniseed cookies as desired and enjoy.
