Zucchini risotto with chicken
Tasty, healthy and nutritious risotto, which will give you a fresh summer taste. Ideal for lunch or dinner.

- 200 g chicken meat
- 1 pcs zucchini
- 200 g Arborio rice
- 1 pcs onion
- 2 cloves garlic
- 1 l chicken broth
- 2 tablespoon olive oil
- 1 tablespoon butter
Spice
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon thyme

Directions
Cut the chicken meat into smaller pieces and fry them in a pan with a little olive oil. Remove the meat and set aside.
Add the remaining oil and butter to the same pan. Add the chopped onion and garlic and sauté. Add the rice and stir until the rice is translucent.
Lower the temperature and add a small portion of broth. Stir until the broth is absorbed by the rice. Repeat this process until all the broth is absorbed by the rice.
During the addition of broth, we also add chopped zucchini. We stir until the zucchini is soft.
When the rice is soft and all the broth is absorbed, we add the chicken meat back into the pan and stir. Season with salt, spices and thyme.
