Vietnamese Fresh Paper Rice Rolls

Ingredients
For Rolls:
- 16 letters of rice paper
- 1 Cup grilled meat (such as chicken pork, or shrimp)
- 1 Package rice noodles, cooked according to package instructions
- 1 Cup lettuce, thinly shredded
- 1 Cup cucumber, julienned
- 1 Cup bean sprouts
- 1 Cup fresh herbs (such as mint, basil and cilantro) roughly chopped
- 1⁄4 Cup peanuts, (optional)
- Rice paper dipping sauce
For the Rice Paper Dipping Sauce:
- 1⁄4 Cup hoisin sauce
- 2 tbls peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- water

Directions
Prepare the Rice Paper Dipping Sauce by combining hoisin sauce, peanut butter, sauce, rice vinegar, and minced garlic in a small bowl. Mix well, and if needed, add a little water to achieve desired consistency. Set aside.
Fill a large shallow dish or pan with warm water. Dip one sheet of rice paper into the water, ensuring it is fully submerged, and leave for about 10 seconds or until it becomes pliable. Remove from the water and place on a clean surface.
Arrange a small portion of the grilled meat, rice noodles, lettuce, cucumber, bean sprouts, and fresh herbs in the center of the rice paper.
Fold the sides of the rice paper over the filling, then roll from the bottom tform a tight cylinder, similar to a burrito. Repeat this process with the remaining ingredients.
Serve the Paper Rice Rolls with the Rice Paper Dipping Sauce and crushed peanuts for added texture, if desired.
