Vegan Vegetable Tofu Stir Fry with Sauce

Ingredients
- 1 Cup of uncooked rice
- 2 tbls olive oil
- 2 cups assorted vegetables (bell peppers, broccoli snap peas carrots etc)
- 14 ounces of firm tofu, drained and cubed
- 1 tablespoon fresh ginger, minced
- 2 cloves garlic, minced
- 1⁄4 Cup soy sauce
- 2 tbls maize starch
- 1⁄2 Cup vegetable broth
- salt and pepper to taste

Directions
Cook the rice according to package instructions and set aside.
In a large pan or wok, heat the olive oil over medium heat.
Add the assorted vegetables and tofu, and stir-fry for about 5 minutes or until just tender.
Add the minced garlic and ginger to the pan, stirring frequently to avoid burning.
While the vegetables are cooking, whisk together the soy sauce, cornstarch, and vegetable broth in a small bowl.
Pour the soy sauce mixture over the stir fry and stir to coat the vegetables and tofu. Continue to cook until the sauce has thickened.
Season with salt and pepper to taste.
Serve the stir fry over the cooked rice.
