Traditional Greek Lamb Souvlaki Skewer Wraps

- 11⁄2 Pounds of lamb leg steak, cut into cubes
- 6 pita breads
- 1 large tomato, diced
- 1 cucumber, diced
- 1 red onion, sliced
- 1 Cup of tzatziki sauce
- Fresh mint leaves for garnish
Marinade ingredients:
- 4 cloves garlic, minced
- 2 tbls of olive oil
- 1 tablespoon of lemon juice
- 1 tablespoon of red wine vinegar
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- salt and pepper to taste

Directions
Combine the marinade ingredients in a bowl, add the lamb pieces, and mix well. Cover and refrigerate for at least an hour to allow the lamb to absorb the flavors.
Preheat your grill to medium heat.
Remove the marinated lamb from the fridge and thread onto skewers.
Grill the lamb skewers for about 3-4 minutes on each side, or until they are cooked to your liking.
Warm the pita bread on the grill for about 1 minute on each side.
To assemble the wraps, spread a generous amount of tzatziki sauce on each pita, add some grilled lamb, followed by the diced tomatoes, cucumber, and sliced onion.
