Tomato Soup with Celery

- 8 g lard
- 50 g shallots
- 300 g celery
- 580 g fresh tomatoes
- 700 ml water
- 70 g parmesan
- ground caraway

1. Step
Sauté the finely chopped shallot in fat. Add the diced celery and fry, then add the chopped tomatoes. Cover with water, add salt, spices and cook.
2. Step
We remove it from the heat and blend it with a hand mixer. We pass the vegetable pulp through a sieve to make the soup smooth.
3. Step
Add the grated Parmesan and bring it to boil again until the cheese melts. According to your own taste, season it further and serve with a roasted roll drizzled with olive oil and sprinkled with dried garlic. Sprinkle the surface of the soup with basil. Bon appetit.
