The most delicious homemade roast lamb shanks recipe
One of the most typical Christmas dishes is roasted lamb shanks, almost always accompanied by roast potatoes. This is a recipe for cooking at a low temperature for longer than usual, which results in tastier and juicier meat
Ingredients
- 1 kg lamb leg
- 1 kg baby potatoes
- 250 ml vinegar
- white wine or cognac
- thyme
- Fresh Rosemary
- Extra Virgin Olive Oil
- ground black pepper
- salt

Directions
Season both sides of the lamb shank with salt and pepper.
Add a dash of extra virgin olive oil and spread it all over the meat.
Add some thyme and fresh rosemary.
Top with 250 ml of vinegar or cognac or white wine.
Add the garlic cloves.
Wash the potatoes and place them on a baking tray. Season with salt and pepper.
Add a dash of extra virgin olive oil, a few leaves of rosemary and fresh thyme, and a few cloves of garlic. Then, mix well.
With the oven preheated to 200ºC, place the potatoes on the lowest tray in the oven and the meat on the middle tray. Lower the temperature to 170ºC and bake for 3 hours.
Place the meat in the centre of the tray and place the potatoes and roasted garlic around it. Garnish with fresh thyme and enjoy.
